The goal is to offer you authentic and natural ciders. My approach aims to intervene as little as possible while maintaining constant monitoring. Resorting to a natural transformation process results in a more modest safety margin but promotes a purer expression of the apple.
To achieve this quality, natural indigenous yeasts present in the fruits initiate slow fermentations. This artisanal method allows flavors to naturally flourish without artificial additives or haste. Careful temperature control preserves the balance and aromas of my ciders. Once fermentation is complete, bottling takes place on-site. Instead of artificially adding carbon dioxide, the emphasis is on a natural effervescence, providing a genuine tasting experience.

I am originally from Picardy, and from an early age, I found pleasure in cooking, experimenting, and creating drinks using the gifts of nature. This natural inclination paved the way to the south of France, where I immersed myself in the world of oenology. My journey took me through various vineyards, nurturing my curiosity and passion.
Throughout these experiences, I learned the intricacies of winemaking, recognized the importance of terroir, and discovered the magic of blending. However, beyond this knowledge, I felt the need to experiment, to go beyond traditional methods and explore new paths.
It is this quest for originality that ultimately led me in an unexpected direction. Today, here I am in Ariege, a region far from the vineyards but rich in orchards and apple groves. The apple, humble yet versatile, has always been a cornerstone of local culture. It is here, in harmony with my environment and convictions, that I realized I could bring my expertise and personal touch by transforming this fruit into cider.

I’ve always used it with my friends and those close to me, so it has found its little place in my life and daily routine.
It can define either: a friendly person, a little snack, or why not a glass of cider! So, shall we have a gayouth ?
